Wednesday's Weekly Recipe - Santa Fe Chicken


Y'all! I'm all about a Pinterest Recipe!
Made this the other night and... Oh My WORD! SOOOOO good.
To be fair, mine was no where near this visually appealing (which is why I am posting the Pinterest picture instead of a picture of mine) but it tasted great!

Super simple to make too....

Ingredients

4 boneless skinless chicken breasts
salt and pepper
4 tsp taco seasoning
1 15 oz can black beans, rinsed and drained
2 cups corn kernels, fresh, canned or frozen
1.5 cups salsa, drained
1/4 cup cilantro, chopped, plus extra for garnish
1 cup Mexican cheese blend, shredded
1 4oz can green chilies, chopped
sour cream, dollop for serving


Directions

Preheat oven to 350 degrees and spray 9x13 casserole dish with non stick cooking spray.
Season both sides of each chicken breast with salt and pepper, then sprinkle with taco seasoning.

Add black beans, corn, salsa, and cilantro into casserole dish and mix thoroughly.
Place chicken on top of veggies and cover with aluminum foil.

Bake 35-40 minutes until chicken is cooked through.

remove from oven, discard aluminum foil

Spread green chilies over chicken and top with shredded cheese.

Return to oven uncovered to melt cheese, approx 5 min.

Remove from oven, top with reserved cilantro, and serve chicken with a dollop of sour cream and the veggie medley on the side.
